Perfect Crustless Quiche

Ingredients
  

  • Non-stick cooking spray EVOO or Avocado work well
  • 6 Eggs
  • 1 cup low-fat shredded cheddar and/or mozzarella cheese
  • 1 ¼ cups grated fresh zucchini
  • 1 ¼ cups baby bella mushroom slices
  • ¼ tsp salt
  • ¼ tsp dried basil
  • ¼ tsp minced garlic optional
  • tsp black pepper

Method
 

  1. Preheat oven to 350℉
  2. Lightly spray a 9-inch quiche/pie pan with non-stick cooking spray
  3. In a medium-size bowl, crack eggs and whisk thoroughly
  4. Add cheese, stir to mix in
  5. Add grated zucchini; Break mushroom slices into small pieces, add to bowl; Stir to combine
  6. Add salt, pepper, basil, and garlic, mix all ingredients together
  7. Pour into prepared pan and bake in preheated oven 30 minutes, till eggs have set, edges are bubbly, and top is starting to brown
  8. Let cool 5-10 minutes before cutting and serving
