For others, this egg-based baked dish blended with cheese, veggies, and/or other protein, may sound complicated, costly, too time-consuming. Or maybe your impression is a mix of both notions. In any case, you’re in luck! Perfect Crustless Quiche is not only delectably scrumptious, but it comes together quickly, easily, and relatively inexpensively.
Made with energy-boosting eggs as a primary ingredient, quiche is an incredibly versatile option for breakfast, brunch, or dinner. You can quickly and easily substitute ingredients for some of your family’s favorite flavors. Perfect Crustless Quiche can be prepared vegetarian, with meat, or as vegan versions, as well. Ideally, you want a low-to-moderate-fat (1-6 grams/serving) cheese. You can grate your own from a block of cheese, or use pre-shredded for a quicker, easier add-in.
- Veggies – There are endless combinations of veggies that you can add to quiche. Low-carb veggies provide vital nutrients with less negative impact on your blood sugar or energy levels than starchier carbs. Many veggies are also a good source of fiber, another plus! The nutritional information listed below is based on the inclusion of grated zucchini and sliced mushrooms. Zucchini and baby bellas are good sources of antioxidants and vitamin C, and potassium and Vitamin D, respectively.
- Seasonings & Herbs – Elevate your quiche with seasonings and herbs you likely already have on hand in your kitchen. (As such, they’re not counted in the “5 or less” description.) Salt, black pepper, dried basil, and garlic complement this dish nicely.

Try any of the alternatives below on their own or in combinations to fit your needs quickly and easily. Or add in your family’s favorite flavors for a unique dish that’s all your own. - Make it Vegan – Swap the whole eggs with a commercial vegan egg product, such as Just Egg, or other vegan egg replacers. Also substitute the cheese with a shredded cheddar-style or mozzarella-style vegan product.
- Change Up Your Cheese – In addition to cheddar and mozzarella, other popular cheeses often used in quiche are Swiss, Gruyere, Fontina, and Feta. Combining three Laughing Cow Light wedges into your mixture before baking also adds more creaminess without a lot of fat. Score!
- Veg Out – Besides zucchini and baby bellas, asparagus, tomatoes, spinach, broccoli, and bell peppers are also great veggie options.
- Pack More Protein – Satisfy meat lovers’ tastes with add-ins such as crumbled cooked bacon, diced ham, cooked ground sausage, or browned pancetta pieces.
- Other Options – Topping a serving with 2-3 tablespoons of low-sugar tomato sauce – like Hunt’s Garlic & Herb – is another flavorful way to add more veggies. Plant-based meat substitutes offer additional protein to your vegan quiche. Onion powder and oregano are also excellent seasoning choices.

Make Perfect Crustless Quiche Ahead of Time
Perfect Crustless Quiche can be served straight out of the oven, after cooling for a few minutes. Other times, however, perhaps if you’re planning a big brunch, you may want to make it ahead of time. In that case, simply prepare and bake your quiche as usual, then allow it to cool completely. Once cooled, cover the pan tightly with plastic wrap and foil and place in the freezer. Thaw your quiche overnight in the refrigerator the night before you plan to serve it. Or, the day of, allow it to thaw on the kitchen counter for 30 minutes. An additional six minutes at 30% power in the microwave may also be necessary using this method. (Provided your dish is microwave-safe, of course.) Then, you will re-heat your quiche in the oven for 30 minutes.
While your quiche re-heats, you have time to prepare other brunch menu items, set the table, relax even! In no time, brunch will be served!

- Use an oven- , freezer- , and microwave-safe pan.
Perfect Crustless Quiche
Ingredients
- Non-stick cooking spray EVOO or Avocado work well
- 6 Eggs
- 1 cup low-fat shredded cheddar and/or mozzarella cheese
- 1 ¼ cups grated fresh zucchini
- 1 ¼ cups baby bella mushroom slices
- ¼ tsp salt
- ¼ tsp dried basil
- ¼ tsp minced garlic optional
- ⅛ tsp black pepper
Instructions
- Preheat oven to 350℉
- Lightly spray a 9-inch quiche/pie pan with non-stick cooking spray
- In a medium-size bowl, crack eggs and whisk thoroughly
- Add cheese, stir to mix in
- Add grated zucchini; Break mushroom slices into small pieces, add to bowl; Stir to combine
- Add salt, pepper, basil, and garlic, mix all ingredients together
- Pour into prepared pan and bake in preheated oven 30 minutes, till eggs have set, edges are bubbly, and top is starting to brown
- Let cool 5-10 minutes before cutting and serving
